By finishing the game without eating meat and without killing any animal. There are no shortcuts and no way to fix it halfway through: one slip invalidates it.
Three specific warnings. Food: plenty of cooked dishes contain meat, so live on bread, cheese, fruit and vegetables. Hunting: some quests push you into hunting and you have to resolve them another way. And dogs: they count as animals, and it is desperately easy to kill one by accident in a fight.

Between 100 and 130 hours in a single playthrough, if you plan it well.
